The United States Department of Agriculture does a lot of excellent research as a part of the services that they provide to the American people (and truly, the world). One of the pieces of the research they publish daily is the boxed beef cutout values. We find keeping track of these values to be a good tool in determining what the demand for beef looks like. It can be extremely interesting to see the peaks and valleys develop, especially when they’re seasonal (and perhaps even more interesting when they aren’t). We’ve been keeping track of it for a few years now, have a look at our charts below.
